It is a chloride salt of the anthocyanidin glycoside, cyanidin-3-glucoside.
Cyanidin 3-glucoside is the major anthocyanin found in legumes, such as black
soybean, common bean, cowpea, and lentils. It is known to show antioxidant,
anti-inflammatory, antitumor, and antihypertensive properties.
Application
Cyanidin 3-glucoside chloride can be used as a calibration
standard in the identification and quantification of anthocyanins in:
- Artichokes
and botanical raw materials using high-performance liquid chromatography
(HPLC).[1][2]
- Black
rice samples using high-performance thin-layer chromatography(HPTLC).[3]
